MEET THE Chef :

Casey Walcott

   

Chef Everett “Casey” Walcott started humbly as a dishwasher at the celebrated Bistro Laurent in Paso Robles, California. At a time when new vineyards seemed to spring up by the minute, this young chef was captivated by the Central Coast’s local wine country and farm-fresh take on classical culinary methods. 

After growing in skill and responsibility for wine country cuisine at the Bistro, his passion and creativity led him to hold key roles at various restaurants and entrepreneurial ventures in San Luis Obispo County. Chef Casey’s contemporary coastal cuisine is inspired by the surrounding local wine country that first captivated him at the beginning of his career. His seasonal menu is prepared with locally farmed vegetables, premium pork and beef and the highest quality fish and seafood. All desserts are made in house from scratch.

MEET THE rESTAURANT mANAGER :

simon Kovesdi

Simon Kovesdi has taken a long journey to the Sea Venture. He grew up in the small seaside town of Bournemouth on the south coast of England. His parents ran a small hotel in which Simon and his brother helped out during the summer from an early age. After his parents retired to Spain, Simon wanted to travel and became a waiter on Royal Caribbean Cruise Line for three years.

Simon met and married Rachel in 1996 and they moved to Washington DC when he first worked at the historic Morrison-Clark Inn and then moved on to become a manager at the French restaurant “La Madeleine.”  Wanting to start a family and after travelling extensively on the West Coast, Simon and Rachel moved to San Luis Obispo in 1999. Simon was hired as the restaurant manager at the SeaVenture and has been here ever since helping make the SeaVenture into one of the jewels of the Central Coast
